Easy Baked Indian Potatoes

Easy Baked Indian Potatoes Recipe


Prep

  • Prep: 10 minutes, cooking time 30 minutes at 400F.
  • Serves 5
  • Recommended equipment: 9x13 baking dish


Ingredients

  • 2 cups cubed potatoes (½" cubes)
  • ½ cup finely chopped red onions
  • 1 tsp chopped garlic
  • 1 tsp Garam Masala powder (recipe here)
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 Tbs olive oil

Instructions

  1. Pre-heat oven to 400F.
  2. Mix all ingredients together in your baking dish.
  3. Bake uncovered, carefully stirring every 10 minutes. Use a thin spatula so you can lift and turn the potatoes, being careful not to mash them.
  4. Remove from heat and serve.

 


Chef's Tips 

Leave the peel on your scrubbed-clean potatoes to increase the nutritional value. Red Onions provide beautiful color contrast. You can sweeten the flavor by substituting Vidalia Onion.  They’re delicious with Indian red chili sauce and Savory Vegan Crepes.
