Ginger Pickled Onions

Ready for a new pickled delight? These onions are tangy, crunchy and a bit spicy. Chop, add easy marinade, put in a jar, wait one day and eat--so simple! Make any meal exciting (and fancy) by adding contrasting flavors and textures. We serve these with many lunches, on sandwiches, alongside dinners, and some savory breakfasts.

Ginger Pickled Onions Recipe


Prep

  • Prep time 10 minutes, let marinate overnight before eating
  • Serves 16
  • Recommended equipment: 1-quart glass jar with lid


Ingredients

  • 1 large red onion thinly sliced into half rounds
  • 1 Tbs slivered fresh ginger root
  • 1 small dried hot red pepper
  • ¾ cup seasoned rice vinegar
  • 2 Tbs fresh lemon juice
  • 1 tsp Agave nectar or maple syrup

Instructions

  1. Place all liquids in a 1-quart glass jar. Put the lid on and shake to mix.
  2. Add the vegetables, shaking gently to coat the onions in the rice mixture.
  3. Place in the refrigerator and leave overnight to marinate. We shake the jar a couple more times to attempt to give all the onion slices a chance to sit for a few hours in the marinade in the lower 1/3 of the jar.

 


Chef's Tips 

Contrasting flavors and textures is key to Indian cooking and good advice to enhance any meal. These pickles last at least a week in the refrigerator. Ours have never lasted longer than that because we eat them up!  All four of us love them.
