Vegan Fruit Pizza

 

Vegan Fruit Pizza is the perfect dessert for a party, especially for kids! We make it with a high-protein, oat-based crust and a cashew-based lemon pudding and then top it with our favorite fruits. 

The first time I made a fruit pizza was for my daughter’s 5th birthday party. Her birthday is in December and we went to the covered picnic shelter at a local park. We built a roaring fire, made spiced cider, and ate fruit pizza while our friend, Antoinette, told the children stories. 14 years later, I still see her face blowing out her candles.

Just a couple weeks ago, I made my second fruit pizza for Orion’s 6th birthday and brought it to the skatepark to share with his friends.

Both times it was a hit with the kids and adults! No one knew it was so healthy!

Make the crust ahead of time so it has time to cool. The pudding will thin when it comes to room temperature, so refrigerating the fruit pizza prior to serving is a good idea.

Vegan Fruit Pizza Recipe


Prep

  • 1-hour prep plus an hour to chill
  • Serves 10
  • Suggested equipment: large bowl, parchment paper, cookie sheet or baking pan, lemon zester, knife, blender (we love our Vitamix for making smooth custard), knife. 

Ingredients

Vegan Shortbread Layer

  • 2 cups oat flour
  • 1 ½ cups quick-cooking oatmeal
  • 1 ½ cups rolled oats
  • ½ cup chopped pecans
  • ½ tsp salt
  • 1 cube (1/2 cup) Earth Balance cut into small cubes (or your preferred butter substitute)
  • ½ cup coconut oil
  • ¼ cup brown rice syrup
  • ¼ cup maple syrup

Lemon Custard Layer

  • ½ cup raw cashews soaked in water for at least 1 hour
  • 6 Tbsp whole coconut milk
  • 4 Tbsp maple syrup
  • 6 Tbsp fresh lemon juice
  • Zest of 2 lemons
  • ½ tsp ground turmeric

Fruit Topping Layer

Mixed fruit of your choice. We used:

  • 2 kiwis
  • 1 mango
  • 1 banana
  • ½ cup blueberries
  • ¼ cup raspberries
  • ¼ cup strawberries
  • ½ cup pineapple

Garnish with lemon zest, toasted coconut, chocolate shavings…

Instructions for the Shortbread Layer

  1. Preheat oven to 375 F. 
  2. Stir all dry ingredients in a large bowl. Add butter substitute and coconut oil. You can use a pastry cutter to mix, but I prefer by hand. Mix until the butter and oil are combined thoroughly and the batter is crumbly. 
  3. Add the rice syrup and maple syrup. Mix until combined (again, I use my hand).
  4. Line a cookie sheet with parchment paper. If you don’t have a cookie sheet with a ½” or 1 cm rim, use a 9x12 baking pan.  Press and smooth the batter onto the parchment paper, pressing to the edges. Bake for 25 minutes.
  5. Edges will be slightly browned. Remove from heat. Cool.
  6. Refrigerate until cold.

While the shortbread is cooking, make the lemon custard.

Instructions for the Lemon Custard Layer

  1. Zest 2 lemons. You can use a hand zester or Microplane zester. If you don’t have either of those, you can peel your lemons and chop the peels.
  2. Juice enough lemons so you have 6 Tbsp of lemon juice.
  3. Place soaked cashews, lemon juice and zest, coconut milk, maple syrup, and turmeric in a high-speed blender. Blend until light and creamy.
  4. Your lemon will set up when you refrigerate it. Refrigerate until cold.

Instructions for the Fruit layer

Slice the fruit into the thickness and shapes that you want. Arrange the in any way you like. Cut out shapes with small cookie cutters: hearts, stars, flowers…

Putting It All Together

  1. Take the Shortbread layer out of the refrigerator.
  2. Smooth the lemon custard evenly over the shortbread.
  3. Arrange the fruit as you like it over the custard.
  4. Garnish as you like.
  5. Refrigerate your fruit pizza until you’re ready to serve it.

Chef's Notes 

Add whatever fruits you like. Mint leaves, lemon zest, or toasted coconut would be great additions too. The crust is the same one we use in our Vegan Berry Shortbread Bars. The lemon custard layer is the same lemon custard we use in our Lemon Raspberry Chia Parfait.
