We’ve been experimenting with this recipe for a while! We love vegan banana bread but are often bored by it. It often presents with a mono-flavor of sweet banana as well as a consistently soft texture.

We set out to remedy this with a Your Vegan Family Superfood Easy Vegan Banana Bread creation! It’s comfort-food-satisfying, has a strong buttery banana flavor, and a diverse texture from the walnuts and chia seeds. It’s also quick and easy to whip up! We love it hot and fresh out of the oven, but our favorite is toasted up the next morning for a superfood, plant-based breakfast!

Superfoods are nutrient-dense, meaning they contain a lot of important nutrients in a small volume of food. They're incredibly good for you! We add them to our recipes to give you more vitamins, minerals, fiber, antioxidants, healthy fats, and proteins in every bite.

This vegan banana bread recipe contains three nutrient-dense superfoods: Chia seeds, Flax seeds, and walnuts. 

Chia seeds are high in anti-oxidants, the helpers that keep your cells safe from free-radicals that can play a role in cardiac problems, cancer, and other diseases. They're also high in heart-healthy omega 3 oils, fiber, and protein. 

Flax seeds have the benefits of Chia seeds and also contain lignans, which may reduce cancer risk. 

Walnuts have the benefits of Chia seeds too and they also support gut health (a key for overall mental, emotional, and physical well-being), and decrease the inflammation that causes pain and disease.

Vegan Banana Bread Recipe


Prep

  • 15 minutes prep, 90 minutes bake
  • Serves 10 (slices)
  • Suggested equipment: electric mixer, bread pan
  • Pre-heat oven to 350F

Ingredients

  • 4 ripe bananas, mashed
  • 1 cup room temperature Earth Balance or other vegan butter
  • 1 cup coconut sugar, raw sugar, or light brown sugar
  • 3 Tbsp ground flax seed
  • 6 Tbsp water
  • ¼ cup applesauce
  • 1 tsp vanilla
  • 2 cups all-purpose white flour
  • 2 tsp baking powder
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 1 cup chopped walnuts
  • ¼ cup chia seeds

Instructions

  1. Pre-heat oven to 350F. Oil a large bread pan. 
  2. Mix the 3 Tbs ground flax seeds and 6 Tbs water in a small cup and set aside.
  3. Place 4 bananas, 1 cup room temperature butter, and 1 cup sugar in a mixing bowl and mix with the electric mixer until light and fluffy, about 2 minutes. If the butter is not room temperature cream the butter and sugar first, then add mashed bananas and mix until fluffy.
  4. Add flax mixture, 1/4 cup applesauce, and 1 tsp vanilla and mix for 1 minute.
  5. Add 1 cup chopped walnuts and stir. 
  6. Combine all dry ingredients: 2 cups flour, 2 tsp baking powder, 1/4 tsp salt, 1/4 tsp nutmeg, 1/4 cup chia seeds. 
  7. Add dry ingredients to the wet ingredients. Using a spatula or large spoon, mix until combined.
  8. Pour into the prepared bread pan.
  9. Bake 75-90 minutes or until a toothpick inserted into the center emerges clean.
  10. Remove from heat and cool for 10 minutes.
  11. Remove from pan and place on a rack to cool.

Chef's Notes 

This is a heavy loaf of bread! If you let it cool for 20 minutes it will be easier to cut. Feel free to substitute flours if you are gluten-free.  

You can also make these as muffins or a single layer cake. You will need to monitor them for cooking time.
